On this miserable rainy afternoon I can’t help but sit at my desk and fantasize about when the weather gets a little bit colder and I will finally feel justified making the Mac n Cheese recipe I’ve been drooling over. (Please appreciate the direct contradiction to my last post where I ended with ‘I wish summer never ends!’… but really who wants Mac n Cheese in 35 degree weather!) Back to the Mac n Cheese. This recipe I found on Katie Goodman’s blog ‘Good Life Eats’ combines the oh so necessary element of bacon but also adds just the right amount of spinach so that we can all feel a little bit better about what we’re eating. I think when I make it I’ll add some breadcrumbs on top and bake it in the oven for a little bit to get that wonderful…oh how do you put it? Baked quality. And what do I think goes perfectly with Mac n Cheese? New Shoes! Well, not actually but alongside the Mac n Cheese I am also craving these funky Steve Madden platforms. In my future fantasy I will thoroughly enjoy a steamy bowl of that Mac n Cheese with my friends and then proceed to stomp out of the house in my new platforms for a night on the town. Dreams can come true!!
