Tea for Two, and Four for Tea


Alright, I know that title makes no sense. Carrying on. My mom has a love for party sandwiches: those little teeny sandwiches with no crusts that usually have one or two ingredients stuffed between two pieces of soft white bread. A strange love I realize, but a love all the same. It was her birthday recently, so to celebrate I thought- why not make her what she loves? And what goes perfectly with party sandwiches? High Tea and Mimosas! (Obviously) My sister and I awoke early one weekend morning and started baking and cooking and somehow managed to end up with a high tea brunch of epic proportions.  I was able to make those Bacon, Gruyere and Green Onion scones I was drooling over a few weeks ago found here. We also made some amazing Blueberry Buttermilk muffins (HIGHLY RECOMMENDED), recipe found here. Of course we didn’t forget about the party sandwiches and made 3 kinds: Cucumber with Herbed Cream Cheese, Egg Salad with Chives and Smoked Salmon with a Dill Caper Mayonnaise. All of this served with a simple arugula salad….talk about a feast!! And for only 4 people…I don’t think we got too ahead of ourselves at all!
